Betsy's Chicken Soup with Matzo Balls Recipe

Chicken soup with matzo balls Soup 1 Chicken plus extra wings or backs 2 sticks celery 2 carrots plus one chopped carrot 1 onion 2 parsnips Salt to taste Rinse chicken and pat dry.  Peel onion and place in chicken cavity.  Peel carrots, parsnips and cut in half or thirds along with celery.  Place in a stockpot.  Add Chicken.  Add water to just cover the chicken.  Bring to a boil and then simmer about 50-60 minutes.  Remove chicken and veggies.  Add...

Chopped liver I do not have a specific recipe for this dish as I learned by watching the women in my family make this.  There are many recipes available on line.  In the past, I have used both beef and chicken liver but I prefer chicken liver.  I use the grinder attachment on my Kitchen Aid mixer.  You can use a food processor but don't over process as this should have a somewhat chunky texture.  I also do not use rendered...
