The Egg
Our meal begins with the eating of a hard-boiled egg dipped in the salt water. The salt water symbolizes the tears of the Jewish people during their enslavement. The hard-boiled egg symbolizes Spring and the renewal of life.
The egg also reminds us of the Jewish midwives who refused to carry out the Pharaoh's order to kill the male babies and thus ensured the survival of the Jewish people.
