Answer to The First Question
This night we eat unleavened bread in rememberance of the passage from bondage in Egypt. When Pharaoh freed the Israelites it is said that they left in such hurry that they could not wait for bread dough to rise (leaven). In commenoration, for the duration of Passover no leaven bread is eaten.
